My tip as the best dim sum I've ever tried in HK is Fu Sing in Wanchai (1/F Sunshine Plaza, Lockhart Road). Fantastic char siu, 3 layer pork, deep fried tofu... whatever... they really pay attention to detail. Looks nice… not been there in ages. The tepid bit will probably keep me from returning.
